Instantpot Vegetarian/Vegan Food

Quessedillas with beans, brown rice, onion paired with salsa or sauce
-Saute veggies of your choice
– add washed brown rice and taco seasoning to your taste
– add water ( rice to water ratio 1: 1/4 )
– cook high pressure 6 mins, quick release
– add cooked beans ( soaked overnight and cooked for 25 min. With some salt and taco seasoning for flavor on high pressure mode in IP
Chickpea curry
– Soak chickpeas in water overnight
– Put onion, capsicum and tometo in food processor
– saute in IP and add spices of your choice
– add chickpeas and water till chickpeas almost covered
– cook on highpressure for 30 mins, quick release pressure and garnish with cilantro when serving
Pasta in Instant Pot

No more baby sitting pasta boiling.

Pasta recepie

  • Add 24oz of pasta in instantpot and add water until pasta is covered. Add 2 table spoon of oil.
  • Cook for 4 min on high pressure. Quick release pressure.
  • For sauce, saute chopped onions and add tometoes, garlic, black pepper, Italian herbs, salt to your taste and coock on saute mode for 5 mins.
  • Add some water to adjust consistency of sauce and mix with cooked pasta.
Chickpea Spinach dumplings and Green Pepper Poppers


Chickpea Spinach dumplings Recepie

  • Mix spinach, chickpea flower, salt, pinch of baking soda and some lemon
  • add some cilantro, chopped green pepper and add water as needed to make better with thick consistency. If you hold into your hand it should not run down.
  • Deep fry by putting spoon full of better on medium heat. Do not overcrowd pan with to many dumplings at a time.

Green Pepper Poppers

  • Use the same better as chickpea spinach dumplings and prepare green peppers by making a one slit/ cut or splitting in half. Remove seeds. Add some lemon juice and sprincle some salt on them.
  • Deep in better and deep fry
  • Do not make better too early otherwise it will get watery as time passes.

-wash Split Chickpeas lentils and strain

-cut, saute sqash with spices ( turmeric, cumin powder, salt, red chilli powder) and add 1 cup of water since sqash leaves water you do not need much

-add a half 🍅 tomato chopped

-add chickpea lentils and sti r to mix everything

-cook at highpressure for 2min in Instantpot

-quick release or NR

Steamed and Seasoned Potatoes

-soak black beans for 3hours in warm water

– cook for 25min at highpressure in Instantpot ( I used 8qrt Instantpot)

-season beans with Taco Seasoning and mesh if you need mesh beans for the recepie such as Maxican Pizza

Potato Curry in Instantpot 2 min HP
Recipe
  • cube 3 medeium size red potatoes
  • add two tablespoon cooking oil to instantpot on saute mode – add 1 tsp musterd seeds – once misterd start popping add cubed potatoes then add 1tsp turmeric, 1 tsp chilli powder ( not spicy chilli, there are chilli powders available based on spice level ),1tsp garlic paste, 1tsp salt, 1tbs cumin powder
  • give it a good stir to mix – add 2 cups of water
  • cook for 2min at high pressure and quick release
Dal Makhni (whole black lentils)




Recipe for Dal Makhni in Instantpot


-Soak 1cup whole black lentils for 6hours in room temperature water
-turn on saute mode and add a half stick butter (4tbs), add 3 medium chopped tomatoes
-add 1tbs garlic paste, 1tbs ginger paste, 1tsp garam masala (mild) 1tbs (spicy) garam masala such as kitchen king from Everest brand, 1tsp cumin powder, salt to taste
-add four cups of water and cook for 8min HP, NR
-add 1stick butter (8tbs) and cook for 1min on Low Pressure

-add 1tsp dry fenugreek leaves powder
-mix and serve with rice or bread of your choice
